From the open terrace of Casa Palopo’s in-house restaurant, you can hear the birds and gentle splash of boats cruising across the lake. Tables are set in intimate clusters and dressed in white tablecloths for a dining experience that’s elegant and rustic, with colorful candelabras hanging above each table, softly lightning the restaurant in the evenings.
Executive Chef Yonatan Gómez Guatemalan-inspired dishes, are infused with an international twist featuring ingredients sourced from local farms around the lake.
From a native breakfast of fried eggs, black beans, and plantains; to lunch and dinner specialties like Canneloni stuffed with hilachas, or an inventive take to the simple caprese salad including nixtamalized honey cherry tomatoes, burrata, and pumpkin seeds pesto.
